The Philippines is one of the Asian countries that is known to have palatable exotic food. For foreigners, the ingredients used are unusual, but for the Filipinos, these are nothing but ordinary. It makes their dishes outlandish. One of the well-known Filipino dishes is Kare-Kare, or in English terms, the oxtail and tripe stew in peanut sauce. It is often seen on special occasions due to its rich, thick, and colored deep yellow sauce. Traditionally, its taste is bland because it is not salted. However, it is complemented by shrimp paste. It is an exceptional dish but to make this incomparable cuisine; it is ideal to understand the processes by which it is made.
The steps involved in creating this dish do not just involve the cooking per se. To make it a remarkable experience, we must start with the basics, such as choosing the right ingredients. The first step is to plan. One must list the ingredients that one should buy because any interruptions in the cooking process can result in overcooking due to the lack of ingredients. Once the cook opens the stove, the process must be simultaneous. The ingredients include one kilogram (kg) of oxtail and one-half cup of each of the ground peanuts, peanut butter, and annatto seeds, one medium-sized white onion, three cloves garlic, two and one-half cups of beef broth, three tablespoons (tbsps.) of cooking oil, one tbsp of ground black pepper, and one-fourth kg each of string beans, eggplants, and the heart of banana (Speedy Recipe, n.d.).
The second step is to choose the proper supermarket. In buying the ingredients in the Philippines, it is advisable to go to a local wet market.
