The goal of this assignment is to examine food available at fast food establishments and examine dietary practices of the everyday consumer while reviewing key nutritional components.
Fast Food Menu Creation Overview
For this assignment, you have been asked to explore the nutritional value of menu items at a local fast food restaurant. Using the available menu items, plan two meals: the healthiest meal possible and the unhealthiest meal possible. Both meals should include an entrée, a side, a beverage, and dessert.

Describe the healthy meal that you have created from the fast food restaurant using the nutritional value of menu items.

           The Wendy’s happy meal consists of the Parmesan cheese salad without dressing as the entrée, apple bites as the sides, and decaffeinated freshly brewed coffee. The parmesan cheese salad without dressing is composed of romaine lettuce, grilled chicken breast, Italian cheeses, crunchy Parmesan crisps, and creamy Caesar dressing. It has allergens, including milk, egg, soy, and fish. The following are the nutritional value of this starter: 300kCal, 14 grams (g) total fat, 125 milligrams (mg) cholesterol, 5 g total carbohydrate (3 g dietary fiber and 2 g total sugars), 41 g protein, 40% calcium,10% iron, and 710 potassium (Wendy’s, 2021). This salad is low in calories, which is appropriate for obese, especially diabetics. According to Diabetes UK (n.d.), a low-calorie diet ranges from 800 to 1200 kcal daily. It also has low cholesterol and fats, which can help prevent the progression of heart diseases. Low cholesterol is defined as less than 200 mg daily (MedlinePlus, n.d.). In this case, there are still 75 milligrams left for the rest of the meals.
           The apple bites have 35 calories, 8 g of carbohydrate, 4% calcium, and 65 potassium (Wendy’s, 2021). It contains low calories and carbohydrates, vital for side dishes since it does not overpower the entrée meal. Furthermore, it does not contain cholesterol or fats, making it an excellent side dish for people with cardiovascular, endocrine, and renal diseases. Additionally, Goodson (2018) iterates that it contains pectin, a soluble fiber, which helps indigestion.
           The freshly brewed coffee contains zero carbohydrates, fats, protein, cholesterol, calcium, and iron and only has 10mg of sodium and 210 potassium. Overall, it has zero calories. Additionally, it has no allergens and uses decaffeinated coffee as the main ingredient. (Wendy’s, 2021). Yu et al. (2016) explain that sodium antagonizes the body’s sensitivity to salt, especially in hypertensive individuals, which will increase the person’s blood pressure. Therefore, Wendy’s decaffeinated coffee is best for those who have the risk of incurring or those who currently have the disease. Furthermore, Tajima (2010) explains that regular coffee can induce hypokalemia. Thus, Wendy’s decaffeinated coffee with high potassium content prevents this from happening.
           The nutritional values of this meal are essential in making food choices at present and in the future, mainly because I have a family history of hypertension and diabetes, which are chronic diseases of lifestyle. Eating foods with low calories but the good nutritional value is best to reduce my risks of incurring a lifetime disease with lifetime maintenance medications.
