The study sought to determine whether a Mediterranean-style diet, designed to satisfy the dietary needs of older adults, improved blood pressure and arterial stiffness over 12 months. It was determined that a Mediterranean-style diet effectively reduces blood pressure and arterial stiffness and improves overall cardiovascular health. The study population comprised 1,294 healthy participants between the ages of 65 and 79 years, where 225 participants had arterial stiffness. Exclusion criteria included any persons with chronic diseases or who were using corticosteroids, insulin medications, vaccinations, or antibiotics. In addition, individuals who had food allergies and required a special diet, were frail, or even suffered from malnutrition were also excluded.
