The authors are seeking to find the best method that can preserve blueberries without degrading their nutritional value. Blueberries are perishable, and they go bad after a few days. Most retailers sell the fruits without exposing them to any treatment since such procedures may destroy the quality and accelerate rotting. As a result, the fruits have transmitted foodborne pathogens, making several people sick. Studies show freezing blueberries keep microorganisms like the Listeria monocytogenes inactive for ten days. However, pathogens are still more likely to cause diseases (Zhang H, Tsai S, Tikekar RV. 2021. Food Control 121:107580). Therefore, the researchers need to develop hygiene technologies to ensure safe edible blueberries with a longer lifespan.
The frequency ultrasound has proved effective in inactivating pathogens. Although, it has a cavitation consequence that can destroy the cells of a plant, causing loss of food nutrients. Combining ultrasound and food grade disinfectants constituents has been shown to achieve higher microorganism inactivation in lettuce (Zhang H, Tsai S, Tikekar RV. 2021. Food Control 121:107580). In addition, the procedure is inexpensive, maintains food quality, and incapacitates several pathogens. Numerous studies show that ultrasound can aid in directing antimicrobial compounds into unreachable areas like the hydrophobic crevice and eliminate bacteria attached to the food.
Many studies have focused on conserving fresh blueberries using cold plasma, edible coverings, and sanitizers. However, few studies have investigated the effects of disinfecting fresh fruits with a collaborative consolidation of ultrasonography and antimicrobial composites and their bearing on food quality (Zhang H, Tsai S, Tikekar RV. 2021. The authors aimed to inspect the stowage feature of washed berries and the efficiency that carvacrol (CR), carbonated water (CW), 1MHz, and 20 KHz ultrasound have when disinfecting blueberries.
Methods
The researchers attained Listeria innocua from a microbiology laboratory and then incubated the pathogens until they reached maximum growth. The scholars bought blueberries used in the research from the local market and used the fruits two days after purchase. The scientists then injected the bacteria on the calyx scar of the blueberries then stored the fruits in a biosafety cabinet for a while before treatment.
The treatment solution consisted of carvacrol and carbonated water made by mixing refrigerated water and compressed carbon dioxide. The researchers used two devices for the 20 KHz and 1 MHz treatment (Zhang H, Tsai S, Tikekar RV. 2021. Food Control 121:107580). The researchers assessed the quality and storage of blueberries in two ways. They washed some berries before storing them and kept others without washing them.
