In order to achieve such crucial functions, the GM is expected to increase productivity, maintain revenue/sales budget, maintain payroll budget, promote business, manage employees, and minimize employee turnover while ensuring consistent quality products. Staffing is a vital function of the GM to ensure that competent staffs are hired and retained. The cost of employee turnover for the restaurant can be high when the organization keeps losing competent employees, and the time of searching and recruiting new employees also can be quiet costly to the organization.
Retention polices can help the GM to reduce turnover. Such retention policies include the following. First, the restaurant should offer competitive wages.
