Background information and motivations
Since my childhood, we have been cooking potatoes and coriander potatoes are my favorite meal. My mother used to prepare the Coriander Potatoes and we used to take the meal to school as our packed lunch. We used to share with other classmates who also came to like the meal. After some time, we had requests from neighbors and family friends to prepare coriander potatoes. This played a significant role in motivating me to learn the best ways of cooking this delicacy. My familiarity and longtime consumption and understanding of the Coriander Potatoes have played a great deal in driving me to write about it. I write this recipe specifically for young people, especially those who have the responsibility of buying or cooking for themselves. This is because it is less costly to them and they are at a relatively tender age with developing bodies hence they require more of the nutrients for nourishment.
Coriander potatoes in our family has a long history that dates to the times of my grandmother. My grandmother was great farmer who had several acres of land in the Northern part. Farming was her best practice given the facts that she never attended any formal school. It’s very interesting to note how good she was in her farming and at one time she was awarded the best farmer of the year. Among other several crops that she was farming included potatoes. Potatoes covered over half of her farm and she spent almost her entire day attending and checking on potatoes in her farm.
