My overall impression of the film is that it does an excellent job of highlighting and honoring the food culture of Delhi. It impresses with its superb cinematography and meticulousness and its broad range of chefs passionate about their cooking and has interesting emotional backgrounds. My favorite scene was Karim's, where I discovered that the establishment has been preparing Seekh Kebabs for years dating back to Haji Mohammed and the Maghal Empire era. This scene tied together several themes and showed how some street foods could be traced to ancient historical events.
Chaat is a popular snack in India that is typically served by food carts across the country. The name of the food originates from the Hindi word catna, which means to lick one's fingers. Chaat is a mixture of deep-fried potato pieces, chutney, yogurt, and vegetables to give a sweet, sour, spicy, and crunchy, savory experience. Dalchand Kashyap is a chaat hawker renowned for his flavorful snack. Making chaat came from Dalchand's grandfather, who later taught his father. Dalchand credits his father for advising him to never chase after money but focus instead on the taste of his dish. If his food is good, then people will always come for more and so will the money.
