Lab 1 - Animal Health, Food Safety and the Community Few people stop to think about how animal health is related to the foods we eat. We also feed our pets many products from the same sources. Yet there is a complex system that produces, transports, processes and retails the foods we eat, and many of these steps are directly or indirectly related to animal health. Animal health is related to food safety and the secure supply of food products. There are a number of important issues that the average consumer rarely considers. These include traceability, the interaction between animal health and human public health, the new trend to organic production and the effect that may have on both animal health and human food safety and supply, and public concern about chemical and antibiotic residues in foods. There are also government policy decisions to be made, and many business strategies that all have to do with these issues. In the lab today, you have seen a video that should have given you some “food for thought” about the issues that you should consider with respect to this assignment and how to think about the product you will choose to discuss. Assignment: For this assignment you are to go shopping with two classmates from this class! (Work in groups of 3.) Go together to a local grocery store, deli or farmer's market. Each of you must choose one food product that has some relationship to animals to think about, investigate and discuss with the others in your group. Each person in your group should try to select a very different product from the others. You may purchase it if you wish, but are not required to do so, though you should write down details about it carefully so you can refer back to them. It could be a food product that you eat and enjoy frequently, or you could be adventurous and investigate one that you've never tried, or have heard of and are a bit nervous about (haggis, anyone?), or one that you really don't like at all… There are several suitable stores close by, or within walking distance from campus, listed below, or you may choose to go elsewhere: Sobey's Urban Fresh, College Plaza – 112 street and 83 ave (Across from Corbett Hall) Safeway Garneau – 109 Street and 82 ave. Save On Foods – 104 Street and 78 ave. Planet Organic Market – 104 Street and 79 ave. K and K Foodliner – a small family-owned meat and imported food shop on Whyte Ave. (82nd) and 99th street Please don't take any photos or videos in stores/markets without permission – most do not allow this. As a group, discuss the product each of you chose to study. Brainstorm a bit. What do you know about this product? What don't you know? Consider the location where you saw or purchased the product. Is it a large grocery retailer, or a small deli? Evaluate the product. Where is it made or packaged? Was it imported, made in Canada, or produced locally? Most importantly, what does animal health have to do with this product? Individually, write a 500 to 600 word essay on the product you chose, describing it and the discussion your group had about it. (Your food choice and discussion is done as a group, but your essay is done individually and handed in separately) Your essay should be somewhat “introspective.” For example, has this way of looking at foods ever occurred to you before? If so, why? Might you change your perspective now? The following are suggestions of approaches that your group can consider when you begin to choose your food items. You do not have to (and you will not have space to) include all of these points in your short essay, but some of these issues might be worth addressing. Start by focusing on food items in one of the several different areas of the store. (Deli, fresh meat, milk, cheese, eggs, produce) Then pick an item there. The food item should have some connection to animal health that you will describe. What do you know for sure, and what do you not know about this product and its background? Identifying what you do not know, or would like to find out, is ok. For example: How was it (or its components) harvested/collected/processed? Where did it come from? Was it produced in Canada? Where in Canada? If not in Canada, where? How can a consumer buying the product know where the product came from? Is it ever confusing or difficult to tell where the components of the product came from? What about if you chose non-animal products – fresh produce, cake mixes, prepared foods? Can animal health affect food products in other areas of the store? How are products identified relative to source/processor, etc.? When you look at a product, can you tell what type of inspection the product received?
