The epidemiological transition refers to the shift in the patterns of the death causes that is associated with a decline in the death rates. The transition describes the change in factors such as patterns of mortality, fertility, population age distributions and life expectancy. For instance, population growth rates increase as a result of medical innovations in disease therapy and treatment. Also, due to the decline in fertility rates the population is re-levelled. Owing to the expanded and upgraded public health and sanitation, the transition accounts for the shift from infectious diseases to chronic diseases. The transformation process is continuous, with some of the diseases disappearing and others re-emerging (Wahdan, 1996).
There are numerous ways to epidemiologically assess the influence of dietary factors on heart disease. For instance, food records are maintained as well as 24-h recalls to provide accurate intake assessments and their impact on heart diseases. Also, food-frequency questionnaires can be used to estimate the usual intake. Further, the current dietary cholesterol recommendations have a range of <200 mg/d for the individuals at an increased heart disease risk to <300 mg/day for the healthy ones. Therefore, this could be another approach to assessment. Other approaches include household survey methods and simple food lists (Christopher & Nancy, 1999).
In the United States, the chronic diseases pose a greater threat to the population. The chronic diseases like cancer, diabetes, cardiovascular diseases and stroke among others are rampant in the country because of the bad habits. Bad habits encompass poor diet because most people do fast foods that lead to obesity, lack of exercise, intake of a high amount of chemicals in food and water among others.
