The digestive system is lined with non-keratinized stratified squamous epithelium that forms the basis of the layers in within the digestive system. An abrupt change in the epithelium takes place near the junction with the stomach, where the surface cells become columnar mucous secretory cells and the deep glands are termed cardiac glands (Oshima, et al. 2012). There are several cardiac glands are can be found on both sides of the gastric junction of the esophagus and while the epithelium lining the stomach consists of several number of tall, mucous-secreting surface cells that are lined together with invaginations of epithelium, the gastric pits, into which the gastric glands secrete the gastric glands are composed of four epithelial cell types which consists of (1) mucous neck cells, which protect the organ from the secretory products of stomach glands; (2) chief cells, which produce and secrete the enzyme pepsin; (3) parietal cells, which elaborate and secrete hydrochloric acid; and (4) argentaffin cells, which are unicellular endocrine glands. At the distal end of the stomach, mucous-secreting pyloric glands are found, and these are structurally similar to the cardiac glands. This therefore means that the stratified squamous epithelium is bound to develop more resistance to oncoming external attacks such as bacterial infections. This means that there is a number of several germ-fighting components that are important in the formation process of this epithelium (Nicotera, et al. 1999).
